A sweet smell of chocolate and pomegranate for a joyful Christmas celebration

BITS AND BOBS – for 15 muffins
200g of all-purpose flour
50g unsweetened cocoa powder
150g plain yogurt
3 small eggs
100ml olive oil
150g brown sugar
baking powder
1 vanilla pod
3 spoons of pomegranate seeds

Preheat oven to 180*
In a large bowl combine sugar and eggs and whisk until smooth and frothy. Add flour, cocoa, olive oil, vanilla seeds and baking powder and mix for about 5 minutes. Add the pomegranate seeds and mix again.
Pour the mixture in the muffin cases and bake for 15 to 20 minutes.
